A crazy fun, semi-cloudy Junmai. Sweet & sour, zesty with peppery aftertaste
A fresh fragrance and a "sweet and sour" flavour with notes of zesty lemon, passion fruit & pepper, a slightly chewy and thick mouthfeel, and a long and peppery aftertaste.
Suitable for heating, this sake pairs well with blue cheeses and spicy/peppery dishes.
Bodaimoto (菩提酛/菩提もと) is an ancient fermentation starter method, a pre-cursor to the Kimoto method. Raw and some steamed rice are left out for a lactic fermentation to start. When proper acidity is reached, the rice is drained, steamed and the funky water is added back in for the koji and yeast to make alcohol. The latic acid in the water kills wild yeast and stray bacteria in the moto and allows the sake yeast to propagate without much microbial competition. This tends to yield slightly earthier and sourer sake - which is a good thing!
