This is a smooth and well-balanced saké with a refreshingly clean finish. The saké has been brewed with the purest deep sea spring water from off the shore of the local Muroto cape (purest natural spring water which has travelled for two thousand years at the very bottom of the sea where no light reaches). The water has an exceptionally small amount of bacteria, yet has a well-balanced mineral content. This helps strong fermentation during sake making process, making this sake beautifully balanced.
The saké naturally pairs well with a variety of seafood. It's a perfect dinner accompaniment.
Azure is best served slightly cold at 5°C.
