This is a very special saké that is produced with the saké rice "Gin Ginga", a yeast known as "Giovanni" as well as subsoil water from Oritsume Basenkyō Prefectural Natural Park in Iwate Prefecture, Japan.
About Nanbu Bijin
The brewery was established in 1902, and the Nanbu Bijin brand name came to be in 1951. The area where the brewery is located used to be called Nanbu ("the Southern area"). The place is rich with nature, abundant water and fertile soil. In Japan, most breweries of the time produced rough, inelegant, sweet sake, but this brewery wanted to make clean and beautiful sake like a fair Southern maiden. Hence, the name Nanbu Bijin (which stands for "Southern Beauty").
