This saké is made from the top-notch Yamada Nishiki saké rice, brewed with a special technique passed down through generations of specially-trained saké masters from the Tanba region. The rice used for this saké has been polished to 70% remaining brewed with water, koji mold and a very small amount of pure distilled alcohol (brewer's alcohol) to help extract flavour and aroma. It is a light, mildly fragrant and easy to drink medium-dry sake.

This saké is excellent for pairing with Japanese barbecued skewered cuisine (beef and asparagus, chicken and leek shishito peppers, yellow onion), tempura (seafood, poultry, vegetable) and noodles (udon, soba, and yakisoba).
