This "namachozo" saké is pasturised just before bottling, after maturing at low temperatures in an unpasteurised "nama" state for 6 months. This gives the saké a fresh, crisp flavour.
"Ginjo" means that the saké is of a high quality, using rice grain that has been polished to at least 60% of its original size and fermented at colder temperatures for longer periods of time.
This saké is excellent for pairing with sauteed vegetables, meat and fish. It tastes best lightly chilled or served with ice.
