This "namachozo" saké is pasturised just before bottling, after maturing at low temperatures in an unpasteurised "nama" state for 6 months. This gives the saké a fresh, crisp flavour.

"Ginjo" means that the saké is of a high quality, using rice grain that has been polished to at least 60% of its original size and fermented at colder temperatures for longer periods of time.

This saké is excellent for pairing with sauteed vegetables, meat and fish. It tastes best lightly chilled or served with ice.

The Hakushika brand represents quality and a sense of tradition since 1662. As the leading saké brewer in Nishinomiya, famed throughout Japan for its "miyamizu", water reputed to be the best for making saké, the brewery is dedicated to producing some of the finest sakés in Japan.
