The brewery has decided to keep the rice milling ratio of this saké a secret, but it is definitely below 23%, and hence the name "Beyond" (or "Au-Delà" in French).
Its annual production is limited to a few thousand bottles only. This product with impeccable purity and intensity is the result of 10 years of research and testing. Its fermentation is much longer than other Dassai sakés as the saké is fermented at a much lower temperature. As the name implies, "Dassai Beyond" goes beyond Dassai 23 which was previously considered the supreme in saké brewing.
The saké is comparatively more complex, more refined and more mineral, yet maybe with a little less creaminess. It's also a little less sweet on the palate. This is precisely why this saké is interesting.
This beautiful saké reminds us of some great spirits that linger in the mouth for an incredibly long finish. It's the same with "Beyond" yet its alcohol level is only around 16%. This is widely praised by critics as the “perfect” saké.
About Dassai Saké Brewery
The family-owned brewery located in Yamaguchi Prefecture produces only super premium sakés attaining the top-notch "Junmai Daiginjo" level. The sakés of the brewery regularly win prizes at international competitions. They use only the best Yamada-Nishiki rice and polish the rice to as low as 23%. The sakés are named by the polishing ratio number.
